History of Caol Ila
Founded in 1846 near Port Askaig on Islay’s north-east coast, Caol Ila (Gaelic for “the Sound of Islay”) was largely rebuilt in the early 1970s to increase capacity. It enjoys one of the most beautiful settings of any Scottish distillery, its stillhouse windows looking straight across the water to the Paps of Jura. It is owned by Diageo and remains a vital malt for the company’s blends.
The distillery today
As Islay’s biggest distillery, Caol Ila produces on a large scale, but its whisky retains a distinctive lightness and finesse. Most is peated, though the distillery also makes an unpeated style for variety, and its spirit is prized both by blenders and by single-malt enthusiasts.
The whisky
Caol Ila is peated but noticeably lighter and oilier than its south-shore neighbours — smoky and maritime, with a fresh, almost grassy character and notes of citrus, olive brine and smoked fish. The classic 12 Year Old anchors the range, alongside the no-age-statement Moch, the Distillers Edition and occasional unpeated releases.
